Breakfast Casserole

Ingredients

    • 2 lbs cooked breakfast meat
    • 2 medium onions*
    • 2 dozen eggs slightly beaten
    • 12 cups hash browns*
    • 2 lbs grated cheese
    • 16 oz cottage cheese
    • 1/2 tsp pepper

Directions

    • Preheat oven to 350°F.
    • Cook and crumble meat. Sauté onions* in a little grease.
    • In a large mixing bowl, crumble hash browns,* add remaining ingredients. Mix well and pour into 3 greased 9x13 pans.
    • Bake at 350°F for 35-40 minutes.

*may substitute Potatoes O'Brien
