Breakfast Casserole
Ingredients
- 2 lbs cooked breakfast meat
- 2 medium onions*
- 2 dozen eggs slightly beaten
- 12 cups hash browns*
- 2 lbs grated cheese
- 16 oz cottage cheese
- 1/2 tsp pepper
Directions
- Preheat oven to 350°F.
- Cook and crumble meat. Sauté onions* in a little grease.
- In a large mixing bowl, crumble hash browns,* add remaining ingredients. Mix well and pour into 3 greased 9x13 pans.
- Bake at 350°F for 35-40 minutes.
*may substitute Potatoes O'Brien
