Taco Soup
Ingredients
- 1 lb. chicken or ground beef*
- 1 packet taco seasoning
- 1/2-1 medium sized onion (depending on taste)
- 1-2 cloves garlic
- 1 green pepper diced
- 1 red pepper diced
- 1 can black beans rinsed
- 1 can pinto beans rinsed
- 1 can diced tomatoes
- 1 can crushed tomatoes
- 1 can corn (or equivalent frozen corn)
- 1 carton chicken stock
- Optional toppings:
- cheese
- sour cream
- avocado
- cilantro
- tortilla chips
- lime
Stove top directions
- prepare the meat separately, including addition of taco seasoning
- sautée vegetables
- add all ingredients in a stock pot
- cook thoroughly
- serve hot with optional toppings
Crock-pot directions
- *if using ground beef, brown the meat prior to addition to Crock-pot
- add remaining ingredients
- cook on high for 4 hours or low for 8 hours
- *if using chicken, shred chicken roughly 30 minutes before serving
- serve hot with optional toppings
