Taco Soup

Ingredients

    • 1 lb. chicken or ground beef*
    • 1 packet taco seasoning
    • 1/2-1 medium sized onion (depending on taste)
    • 1-2 cloves garlic
    • 1 green pepper diced
    • 1 red pepper diced
    • 1 can black beans rinsed
    • 1 can pinto beans rinsed
    • 1 can diced tomatoes
    • 1 can crushed tomatoes
    • 1 can corn (or equivalent frozen corn)
    • 1 carton chicken stock
    • Optional toppings:
      • cheese
      • sour cream
      • avocado
      • cilantro
      • tortilla chips
      • lime

Stove top directions

    • prepare the meat separately, including addition of taco seasoning
    • sautée vegetables
    • add all ingredients in a stock pot
    • cook thoroughly
    • serve hot with optional toppings

Crock-pot directions

    • *if using ground beef, brown the meat prior to addition to Crock-pot
    • add remaining ingredients
    • cook on high for 4 hours or low for 8 hours
    • *if using chicken, shred chicken roughly 30 minutes before serving
    • serve hot with optional toppings
